10 Minute No Bake Iron Bites

As mentioned in my most recent blog post, this weeks theme is all things iron!

Today I’m sharing a recipe for an easy and energizing snack you can make to help boost your iron intake.

To make these bites you just need 15 minutes, a few ingredients, and either a high speed blender or food processor.

What you’ll need:

  • 6 dates

  • 2 tbsp nut butter of choice

  • 3/4 cup dried apricots

  • 1/4 cup dark chocolate chips

  • 1/4 cup flax seeds

  • 1/4 cup pumpkin seeds

  • 1/4 cup cashews

  • 1/4 cup almonds

  • 3/4 cup rolled oats

  • 1/4 coconut (+ more for garnish)


Instructions:

  1. Add nut butter, dates, and apricots to food processor or blender and blend on medium/high until well mixed

  2. Add the rest of the ingredients

  3. Pulse just a few times until ingredients are combined

  4. Sprinkle some coconut onto a spare plate

  5. Using your hands, roll the mixture into small golf-ball sized balls

  6. Roll the balls into the coconut mixture


That’s it! You can enjoy these balls right away or throw them in the freezer to eat over time.

A simple iron packed snack you can add to your weekly snack rotation.
