Quick and Healthy Spiced Granola

One of my favourite things to enjoy in the morning is homemade granola. I love it’s versatility and how easy it is to throw on top of some yogurt, or enjoy on it’s own as a cereal.

Granola is surprisingly easy to make at home, can be adapted to have mix ins that suit your preferences, and is relatively cost friendly. Today I’m sharing one of my tried and true granola recipes that is an absolute staple in our home.

If there’s anything in this recipe that you don’t like feel free to omit it altogether, or simply swap it for something that you would enjoy more.

This recipe takes about 5 minutes to prepare and around 25 minutes in the oven.

What you’ll need:

  • Oats, 2 cups

  • Pumpkin seeds, 1/4 cup

  • Flax seeds, 1/4 cup

  • Walnuts, 1/2 cup chopped

  • Almonds, 1/2 cup, chopped

  • Shredded coconut, 1/2 cup

  • Cinnamon, 2 tsp

  • All spice, 1 pinch

  • Salt, 1 pinch

  • Coconut oil, melted, 1/4 cup

  • Honey or maple syrup, 1/4 cup

Instructions:

  1. Preheat oven to 350F.

  2. Combine all dry ingredients in a large bowl

  3. Melt coconut oil, add honey or maple syrup and pour over dry ingredients

  4. Mix to incorporate and spread evenly across a parchment lined baking sheet

  5. Bake for 20-24 minutes stirring once half-way

  6. Let cool completely and enjoy
