Salted Date Caramels for Labor Preparation

The second recipe in my dates for labor preparation series features these absolutely delicious salted date caramels.

If you have a food processor this recipe is insanely easy, and dare I say, the best date recipe that I’ve ever tried ?!

Fair warning: this recipe doesn’t yield too many caramels, so if your partner enjoys these as much as mine did, you may want to make a double batch.

You only need a few ingredients and about a half an hour of time to whip these up.

What you’ll need:

  • 1 cup pitted dates

  • 1 tbsp nut butter of choice

  • 1/2 tsp vanilla

  • 1 tbsp warm water

  • 1 pinch of sea salt

  • 2 1/2 tbsp almond flour

  • 1 cup chocolate of choice, melted (I used dark).

  • 1 tbsp coconut oil

Instructions:

  1. Add dates, nut butter, vanilla, salt and warm water to a food processor. Blend until smooth. Add almond flour and process until well incorporated

  2. Line a small bread pan with greased parchment paper. Using a spatula, transfer date mixture to bread pan and press it into an even layer, about a 1/2 inch in thickness

  3. Place pan in the freezer for about 20-30 minutes or until hardened and set

  4. When the pan has almost set, melt the chocolate with the coconut oil under low heat. You could also use a microwave if preferred

  5. Remove dates from freezer and cut into equal squares

  6. Taking one square at a time, dip into the melted chocolate and sprinkle with some sea salt

  7. When finished coating all of the caramels, place them in the fridge or freezer until you are ready to eat them
